After putting him down for his nap (following a debacle of a swimming episode in our backyard) I was worn out so I snoozed for 15 minutes and then I needed a boost before doing a cardio workout. One of my friends sent me this little recipe and it was so good y'all. Just what I needed before I got my sweat on while looking ridiculous dancing around my living room. Although, doing a workout in my living room allowed me to see all the hidden snacks the boy is hoarding like a squirrel for winter. *sigh*
Hope you try this and enjoy!
2 T. protein powder
2 T. almond butter (or any nut butter but I used my PB2 for this to cut down on the fat)
2 T. shredded unsweetened coconut
1 T. maple syrup (or honey)
pinch of salt and cinnamon
Pulse ingredients in food processor until well incorporated. the mixture will start to clump together. roll into 4 balls OR you can add a little bit more water and turn it into a yummy dip like I did! It was fabulous with fresh strawberries.
i love these! last time i made them i used dry, bottom-of-the-jar almond butter so they were powdery so i just had to eat it with a spoon. i never even thought of adding water. if you get them to the consistency where you roll them into balls, they taste just like cookie dough. so so good!
